Centerpieces do not have to consist of only flowers anymore. Many centerpieces are made with vegetables and are either created as a simple design or as an edible part of the meal. In either case, these vegetable trays add flourish to your table that is unexpected and that demonstrates your creativity to guests.
Small Trays
Carve out the center of two artichokes, making the centers large enough to place a small candle in a glass container. Place a rubber band around a pillar candle. Then measure the pillar candle's height and cut asparagus pieces about -inch shorter than your candle. You will need enough asparagus to go all the way around the pillar candle, with the asparagus standing upright and tightly bunched. Once the asparagus is cut, insert each piece under the rubber band on the candle. Then tie a ribbon around the rubber band to conceal it. Place the pillar in the middle of a small tray and the two artichokes with candles in them on either side of the pillar.
Tiers
Many craft stores carry plastic tier sets for wedding cakes. Purchase a set and instead of placing a cake on it, use it as a vegetable tray for a centerpiece. On each level place a glass tray, varying the colors of the trays as desired on each level. Then arrange your vegetables on each tray, such as broccoli spears and cauliflower on the first level and celery stalks on the second level. On the top level place a glass dip container or two on the tray. On the legs of each tier, wrap artificial vines or flowers with stems.
Rustic
Use a wooden tray found at most craft stores and give it a rustic look by staining it any color of your choice. Let the stain dry completely, then place a sheet of wax paper in the bottom of the tray. In the center of the tray place a small bowl of your favorite vegetable dip. On one side of the bowl place carved red radishes and on the other side of the bowl place carrot slices. Attach artificial fall leave to the outside edge of the tray with a staple gun.
Array
To give you guests an eye pleasing variety of vegetables, try using a long tray that has 2- to 3-inch sides. Standing up in rows, place various kinds of vegetables, such as broccoli, cauliflower, carrots, asparagus, radishes and tomatoes. Make sure to stand each type of vegetable together so that there is uniformity to your centerpiece. Then add bowls of dip for the vegetables around the outside of the tray for convenience.
