How to Make Meat Trays

Meat trays, also known as cold cuts or party trays, are ideal for luncheons and dinner parties, especially if a large number of people are expected to attend. Meat trays have a variety of different meats that are cut thin for sandwiches. Most often meat trays are served with a variety of different cheeses and other condiments along with breads and rolls.     Go to your local deli and have them cut a variety of different meats, such as ham, turkey and roast beef. These meats should be thinly sliced. Also pick up a variety of different cheeses, such as Swiss, American and provolone, also sliced thin. If the cheese is not sliced thin enough, it will tear when you try and roll it. You will also need to purchase whole leaf parsley, which will be used as a garnish. The amount you will need will depend on the number of people attending your event.

    Wash the parsley well and then allow it to completely dry. You can dry it by placing it on a large paper towel or a cloth hand towel or by using a salad spinner.

    Spread the parsley over your platter (for large groups you may need two or more platters) so that it is completely covered up.

    Roll the meats and cheeses and then uniformly place them onto the platter. For example, roll all the ham and then stack them onto the platter. Then roll the provolone cheese and stack it next to the ham. Alternate between meats and cheeses until the platter is full.

    Garnish the tray using additional parsley or items such as olives and vegetables. You can also place a bowl in the center of the platter filled with mustard or mayonnaise.
